Rye Brownies
Brownies, if you get this bake right, it can be one of the most scrumptious and decadent desserts. I have baked them following various recipes, but somehow I never stuck to any one of them because they did not turn out the way I was expecting them to. So most times, I just relied on boxed mixes to make them, until I came across this AMAZING recipe.
As a little background, last Spring (2024), my family and I visited Janie’s Mill Farm in Ashkum, Illinois to get a tour of the mill, get to know the people behind the curtains and understand the process of milling flour. It was such an amazing experience to meet the Janie’s Mill team, hear more about what they do and how the purpose of their business came about. As part of the tour, we were provided with bakes made with Janie’s Mill flours, and the respective recipes. One of the bakes was a delicious brownie - one bite and I was hooked! I came home hungry for more.
Soon after, I started baking these for my family on a regular basis and it is hands-down my favorite Brownie Recipe. The kicker is, there is no wheat flour in the recipe, you make it with 100% Rye Flour. Yes, you read that right, RYE flour.
Rye flour adds a rich, fudgy texture to the brownies and the flavor goes beyond traditional chocolate - it has an earthy, slightly nutty undertone with hints of coffee and subtle bitterness, which balances the sweetness and enhances the depth of the cocoa. The recipe calls for light rye, but I use dark rye, since it is what I usually have on hand at home.
For the most part, I follow the recipe as written, but lately I have been reducing the amount of sugar by about 1/2 cup. I have not noticed any big changes in the texture of the bake and I still find it plenty sweet. I have also added walnuts and chocolate chips in the past, because you can always bring it up a notch, right? I would say, you can experiment with different toppings in your batter.
